Chicken Potato Salad Recipe

This is my chicken potato salad recipe. We buy chicken thighs in bulk from Costco, so it’s a great chicken recipe. The chicken thighs cook while you are chopping up the potatoes. Then the potatoes cook while you are chopping up the vegetables. I LOVE the Pampered Chef salad choppers for chopping up vegetables and chicken into the perfect consistency. My husband isn’t super big on potato salad, but he loves this chicken potato salad recipe.

You could also use a rotisserie chicken, which would be even faster since they come pre-cooked. Yellow onions could be used instead of green onions. In all sincerity, this is just what happened to be in the fridge that night. The rest usually works as long as I have chicken, pickles, and mayo. Pickles are the secret ingredient really. They just work perfectly in any chicken potato salad recipe.


  • 6 gold potatoes
  • 1/2 cup of green onions
  • 1 cup of carrots
  • 1 pound of chicken thighs
  • 2 TBS Mayonaise
  • 2 TBS Dijon Mustard
  • 3 large pickles
  • 1/4 cup of pickle juice
  • Creole Seasoning
  • Salt
  • Pepper
  • Onion Powder
